This hummus doesn’t last in my household. My son disappears with it and a bag of pretzels. My daughter prefers carrots pulled from the garden. Either way it provides terrific nutrition – protein sustenance, B vitamins and more. A great post workout snack or a nice snack to take on a hike or bike ride.
And it’s fast and simple.
Roast 6 cloves of garlic in the toaster oven, in a pan or in the microwave (about 40 seconds)
In a food processor combine:
- Roasted garlic
- A handful of chives and parsley
- 2 c. cooked chickpeas/garbanzos. (Note: if you used canned, rinse in water a few times to reduce sodium)
- 4 T. lemon juice
- ¼ t. salt
- 3 T. tahini
- 2 T. cold water
Blend until smooth, adding more water to achieve desired consistency.
Serve with pita bread, tortilla chips, pretzels, vegetables, etc.
